I’m about to start a keto diet. Did gluten free years ago, finally have it down. But now need to do sugar-free and low carb–for health. And I’m so glad to find your website. I’m sick, and I need food to heal me. But I just can’t imagine giving up baked goods. Looking like I don’t have to thanks to the work you’ve done! About to make New Year’s cinnamon rolls! To begin this new journey. Thank you!!!

I am SO glad you’re here. You don’t have to give up baking, or sweets. Not that you should eat them all the time, but they do help fill the void and make you enjoy food! You can do this… it’s not hard, but it does take a little getting used to.

Carolyn, I appreciate so much the time you’ve put into your recipes!! And what makes them even better is that they’re good! My 89-year-old mom is on a really weird diet and I can take your recipes and tweak them just a titch for her. We don’t live close, so it’s so fun to be able to treat her with your goodies when we get together. Thanks so much!

Hi Carolyn,
Happy Holidays!
I would love to make these for New Years Eve breakfast and wondered if you know what will happen consistency-wise if I make these with whole milk mozzarella shredded from a block?
Thanks,
Linda

I honestly can’t tell you. I can say that I’ve managed to make it with just about any shredded cheese… sometimes it’s more dense than others but it always works. But I have never shredded my own.

I always shred my own cheese and the dough always turns out great!! ????????????
