Bite-sized keto tacos! These fun low carb mini muffins make a great healthy, appetizer, snack, or even dinner. Dip them in your favourite low carb salsa. In partnership with Safeway.
Perhaps one of the most oft-repeated phrases in a parent’s lexicon is “What’s the magic word?”. And if you’ve said it, chances are you were simply reminding your children of their manners. But I have another magic word for you, one that is far more powerful than “please”. It’s a word that basically ensures that my kids will eat whatever I put in front of them, without complaint. In fact, they will gobble it up and ask for more, so you know it’s a word I use with relative frequency.
How to make Low Carb Taco Bites
That word is “Taco”. I don’t know what voodoo or hoodoo saying that word unleashes upon the world, but it magically makes the age-old dinnertime battle just disappear. And it doesn’t have to be in reference to real tacos, because those don’t count as healthy in my book. Just about anything taco-flavored will suffice. It even has my kids willingly devouring large salads. Taco seasoning is like fairy-dust…sprinkle a little into your meal and the whole world is a happier place.
So when I wanted to make a fun bite-sized healthy snack for a kid-friendly New Year’s Eve party, I instantly thought of this magic word. I hit my local Safeway for healthy O Organics® “taco” supplies…grass fed ground beef, salted butter, shredded Mexican blend cheese, and of course salsa for dipping these little low carb Taco Bites. The O Organics sour cream is rich, delicious, and makes for a fun presentation.
These were so popular among both the kids and the adults at the party, I’ve already got two requests for the recipe. And they’re so easy to make, I know I will be making them frequently. Mini Magic Taco Muffins!
O Organics is one of my favorite lines of organic foods and it’s found exclusively at Safeway, Albertsons, and the whole Albertsons family of stores. It’s an extensive line, with everything from produce to dairy to canned goods, and it’s great value for the money. Because it offers such a great value, it makes choosing organic a real option for any household and I can feel good about what I serve my children.
If you don’t live near an Albertsons or Safeway store, check out the O Organics line available at all Albertsons Companies family of stores including ACME Markets, Jewel-Osco, Vons, Pavilions, Randalls, Tomb Thumb, Shaw’s, Star Market, United, United Express and Carrs/Safeway.
Mini Taco Bites
Ingredients
- 1 lb O Organics grass-fed ground beef
- 3 tablespoon taco seasoning
- 2 tablespoon O Organics salted butter melted
- 6 large eggs
- 6 ounces O Organics Mexican Blend shredded cheese
- 1 cup O Organics salsa
- Other garnish such as O Organics sour cream, sliced olives or guacamole
Instructions
- In a large skillet over medium heat, sauté the beef until almost cooked through, breaking up the clumps with a wooden spoon. Add the taco seasoning and continue to sauté until completely cooked through. Remove from heat and let cool.
- Preheat the oven to 350F and brush a good non-stick mini muffin pan with the melted butter. (You can also use silicone or parchment mini muffin liners, if you prefer - if your pan is not very non-stick, this is your best option). This recipe makes about 32 mini muffins so you may need to work in batches if you don’t have more than one mini muffin pan.
- In a large bowl, whisk the eggs. Add the taco meat and 4 ounces of the shredded cheese. Whisk thoroughly to combine.
- Fill the muffin cups to about ¾ full and sprinkle with the remaining shredded cheese. Bake 15 to 20 minutes, until puffed and firm to the touch. Remove and let cool 10 minutes. Use a thin flexible spatula to run around the edge of the muffins to release.
- Serve with your favourite taco toppings, such as salsa, sour cream, and guacamole.

They looked great ty
Carolyn says
What group? The recipe is right here, anyone can come look at it.
Susan says
Do you think you could add the salsa to mixture before baking or would that be too much liquid? They are really tasty but think I would like it better if salsa was added instead of using it as a topping.
Carolyn says
I think it would be too liquidy! But you could maybe use some of the parts of the salsa fresh… like chopped tomato, jalapeno, and cilantro. That would have less liquid.
Colleen says
Just made these and couldn’t wait to try one! Delicious! Looking forward to breakfasts this week!
Maria says
This is such an easy recipe. I make as stated in the recipe, except in a regular sized muffin pan (makes 12) Reheats in the microwave for about 30 seconds. Top with sour cream, halfed grape tomatoes. Guacamole would be wonderful too.
Anna says
Oh mymkmy…you’re absolutely right about these!! I had to sub in vegan cheese for some of them, so my grandson could eat them, too. And while I do have a mini muffin pan, I knew we were going to have them as an entree, so I made 12 regular size muffin pans worth (4 of them being dairy free). Right now, we only have one measly muffin left, and I just know that tomorrow there will be a race to see who gets it!
Carolyn says
So glad you liked them!

Hi – I was wondering if these could be frozen and reheated. If so, what temp would you recommend reheating at, and would you thaw first – or go from freezer to oven?
Carolyn says
Well my Taco Pie is great in the freezer so yes, since this is similar. I would thaw completely and then reheat at 300F until nice and hot to the touch.

LOVE these! I’m going to make another batch in regular muffin tins for breakfast! My youngest is staying with us for a few weeks and he’d help us devour them!
Jenny says
Learning to cook (I’m horrible) keto for my husband and bought your book. I am wondering on these mini tacos and the Easy Taco Pie…. do you drain the grease from the ground beef once browned?
Carolyn says
I don’t because yay fat! But you could if you preferred.
Leah says
We so want to make these but I can’t find a link to the recipe anywhere! Am I missing it? Help! 🙂
Carolyn says
It’s not you. My site is having issues and we are trying to get it fixed ASAP
Leah says
Phew! I thought I was going crazy! It’s working now.
Thanks so much!
Rita Brown says
I made this tonight and it is delicious! My concerns are that the crust was REALLY thick, disproportionate to the meat and certainly did not look as pretty yours pictured! Could I increase the ground meat to 2 lbs, increase the taco seasoning appropriately and increase the almond milk to one cup? Perhaps this would balance it out a bit!
I just got your cookbook-it’s sensational and I thank you for leading me through the HFLC journey with such delicious foods! I’ve never enjoyed cooking as much as I do now!
Thanks so much!
Warm regards,
Rita

Mine were done in the proportions listed and I made them several times. It’s not a crust, they are supposed to be egg muffins. But do what works for you.
Susan says
Awesome! Both DH, and daughter loved this. 2nd time I subbed Italian sausage, eliminated the seasonings. Wow!
Tonnia Williams says
I am a T1 mom. Thank you for your recognition. My daughter is now into her second year away at college and is in her own apartment cooking for herself. She owns one cookbook right now and that is your Everyday Ketogenic Kitchen cookbook. Thank you for making it easier for her to keep her blood sugars on track while giving her delicious recipes and helping her become a very good cook.

Hi! These look great!
I started following your blog on Bloglovin’ but for some reason it won’t pop up correctly in my feed. When I click on it the page just stays whit. This only happens with your blog and one other blog I follow (The Lemon Bowl). Do you happen to know if any other Bloglovin’ users have had the same problem> Thank you!
Carolyn says
I don’t really use it but no one else has said anything!
