Spring seems very reluctant to come to the Pacific Northwest. Very reluctant indeed. It’s hiding around the corner like a shy child whose parents just can’t coax out into the open. You can sense it’s there and every so often, you see Spring’s face peeking around the corner. And in that moment, you feel a burst of warmth and delight and you think you’re going to get that sweet little thing to come out and play. But the minute you focus your attention on it a little too much, it spooks and disappears again. Nothing you do is going to hurry that Spring along.
Seriously, people. I am still wearing my winter coat most mornings when I venture outside. And I just went to the store and bought some sweet little spring tops and now they sit in my closet, still in the bag. As impatient as I am to wear them, I don’t see it happening in the foreseeable future. This elusive Spring is driving me mad.
But that’s not going to stop me from making delicious keto popsicles. No way, no how. I may be shivering in my winter coat as I eat them but it’s springtime in my mind and I crave warm weather foods. And low carb ice pops are so easy to make and to eat. While I adore making my own ice cream, popsicles are like a cheap and easy thrill. Just blend all the ingredients together, pour into molds (which are always inexpensive), add the sticks and freeze. A few hours later, you have your healthy frozen treat. Even if the weather refuses to cooperate.
