I don’t think I’ve ever had a holiday where I am not left with huge amounts of turkey. No matter how small a turkey we get or how many people we have to dinner, there are just so many leftovers we find ourselves eating turkey for a week.
And getting really sick of it by the end. So it’s time to come up with some creative ways to use all that leftover turkey.

I know I’ve told you about these wonderful veggie crusts before and I really think they are a spectacularly useful keto convenience food option. Turkey Salad Wraps
Ingredients
- 2 cups leftover cooked turkey, chopped
- 2 stalks celery, chopped
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon chopped fresh sage
- ¼ cup chopped toasted pecans
- ¼ cup sugar free dried cranberries
- ⅓ cup avocado oil mayonnaise
- Salt and pepper to taste
- 4 KBosh Pizza Crusts
Instructions
- In a large bowl, combine the turkey, celery, lemon juice, sage, pecans, and cranberries. Stir to combine.
- Add the mayonnaise and stir until well coated. Season to taste with salt and pepper.
- Divide the mixture among 4 Kbosh wraps and roll up tightly. Cut each roll in half and serve.

For the wraps—do you bake the crusts as directed? Then cool?

No, don’t bake them at all. They are fully cooked already, that’s just if you’re making pizza. You can warm them gently to make them more flexible before you wrap them up…

Made this for dinner tonight. Wow! Delicious. My husband requested it as an annual Thanksgiving leftover dish. Everything goes so nicely together. I altered the recipe a little. Our turkey was smoked, which added a nice layer of flavor. I didn’t have sage, so I used a little dried thyme. I also added a bit more mayonnaise. So good with a stack of low-carb crackers!
