I threw a lot of sweets at you over the past couple of weeks. A lot. Cake, cookies, brownies, candy, you name it, I made it and most of it contained chocolate. I think there was a soup recipe in there somewhere, but I admittedly went a little chocolate crazy in the lead-up to Valentine’s Day. It was all very good and thankfully, it was all low carb and gluten-free, but perhaps we need a little break from the sweets. Perhaps it’s time to focus on other food for a little while. Don’t worry, I will be back to the sweets and the chocolate soon enough, but today we’re going to focus on another of my favourite foods: salmon. I love salmon almost as much as I love chocolate and it doesn’t get nearly enough airtime here on All Day I Dream About Food.
And since February is American Heart Month, we have to give salmon its due. We know it’s important to take care of our hearts but that’s easier said than done in our busy lives. Heart disease remains the leading cause of death in the United States, claiming more than 811,000 lives per year. In fact, one woman dies from heart disease every minute. When it comes to heart-healthy foods, fish high in Omega-3s like wild-caught salmon top the list and we should be aiming for 2 servings of O-3 fatty fish per week. And the reality is that I just adore salmon and I always have. I love it in any form, from smoked to grilled to carpaccio. Knowing it’s good for my ticker is just icing on the salmon cakes. So when The Salmon Council asked if I would join them on their heart-smart campaign for February, it was a no-brainer for me.

my favorite way actually happened by experiment and not wanting to throw away left over sushi. we ordered a huge boat at our favorite sushi place and had a few sashimi pieces left over, mostly salmon and decided to bring it home. a few hours later we got hungry again then thought to do something with the sashimi so we seasoned them a little, put it on foil and cooked it in the BBQ till crispy. honestly since then i cant have salmon any other way!! we buy salmon, cut them with a really sharp knife into sashimi then BBQ them. =)

My favorite way to make salmon is to thinly slice lemons and put the on a baking pan; lay a sprig of thyme on the lemon; lay a 4ounce filet of salmon on the lemon slices; season with salt, pepper and a squirt of lemon. Broil for 5 or 6 minutes and it’s done. Yummy and simple.
