A shortage of pumpkin?
I swear that every year, there is a nasty rumour about a pumpkin shortage. I think it’s a conspiracy. It make sense if you think about it: pumpkin season is short so growers across the nation try to capitalize one people’s love of the big orange gourd.
They want to drive sales in the three short months before Thanksgiving and they start putting out whispers of a bad harvest, a blight, a virulent pumpkin-eating bacteria. They induce a mild panic in us pumpkin lovers, sending us into our local stores to fill our baskets to the brim with canned pumpkin. We buy far more than we need, of course. We arm ourselves for the inevitable pumpkin apocalypse. And then we see display upon display of pumpkin right up into and past the holidays and we realize we were hoodwinked. Again.
Seriously, this scenario has played out almost every year since I became a food blogger. I actually didn’t fall for it this year, amazingly enough. A blogger friend was starting to panic when she couldn’t find canned pumpkin at a few store and I told her to be patient. The Great Pumpkin will come and it will be bountiful, I assured her. And so it did and it was.
Is pumpkin keto friendly?
Many types of winter squash are pretty high carb, but thankfully pumpkin is on the lower end of the scale.
Whereas a cup of cooked acorn or butternut squash has 22g of carbs, a cup of cooked pumpkin has only 12g of carbs. And as very few of us eat a cup of cooked pumpkin straight up, it can definitely be easily worked into keto recipes.
And that wonderful pumpkin flavor comes through perfectly in keto cakes or muffins, even when adding less than a full cup. Accented by warm delicious spices like cinnamon, ginger, and cloves, you can get the full pumpkin experience in a low carb recipe.
So yes, pumpkin is most certainly keto friendly, as long as you are mindful of portion size!

Carolyn, I’ve been searching your site for a pumpkin pie recipe but it doesn’t come up. I would’ve sworn you had one but I may be mistaken. I’ve got all my baking stuff out (making your pecan pie first). Can you please point me to the right spot?

My classic pumpkin pie is in my new holiday ebook, but this is my Pumpkin Cream Pie: https://alldayidreamaboutfood.com/category/thanksgiving/page/2/

Could you please recommend a brand & source of whey protein powder or egg white protein powder that you use in your recipes? These pumpkin recipes look so good, but I’ve never used protein powder. Thanks very much.

The products I use are linked right in the recipes themselves. I usually order on Amazon.

I have been considering TRYing the Keto lifestyle but do not know much about it. Which one of your books would be a good introduction to it and explains the benefits and how can I determine if it would be beneficial to me and my family.
Also what would be your top recipes to try first.
Thank you!
Carolyn says
It’s probably best to start with my first book, that talks all about the keto diet and how to stick with it. https://amzn.to/2mDxlmk
Top recipes? Honestly, that’s hard to say since most are very popular. Check out my almond flour pancakes.

WOW! Am I EVER going to try some of these! They look so yummy!!!
With regard to the availability of canned Pumpkin Puree, I have a tip for those of you who own a dehydrator. Here in the Netherlands it’s nowhere to be found… period. So last year I stocked up on pumpkins when they were on sale, pureed them, dehydrated and ground them. Result: nooo shortage at any time and I could rehydrate them to whichever thickness I wanted. Not that I had any idea HOW thick it should be, I just winged it and got lucky 😉
If you are in the envyable situation that you can buy it canned, you could save yourself a lot of work by dehydrating the canned stuff. And if you find it too wet to start with, just dehydrate until it’s to your liking, weigh or measure it, dehydrate and weigh/measure again to know how much water to add to rehydrate.
This way you could always have a year’s supply in case of shortages (or only fear thereof).

That is an awesome idea, I don’t use canned items any longer but, I am a big food saver and look 5o try old ways to preserve items for year round or stock up on items that I can use in many recipes… Thanks so much

I bought your Christmas cookie book and was EXTREMELY pleased!! I made 6 and they all turned out GREAT!
I can see a picture of a pumpkin pie “The Best Low Carb Pumpkin Recipes” but do not see a recipe.
Is this in a book I can purchase like the xmas cookies?
Carolyn says
No, it’s not an eBook. It’s a round up of other recipes, so you need to click the link below the photo. So glad you like the holiday cookies ebook!

Do any of these recipes freeze well? I am traveling and need something that will travel well over two days and leave 15 mins or less serving day prep!
Thanks!!!!
Carolyn says
What ones are you interested in making? I can try to give you an idea if they freeze well.
Leigh says
I was thinking the pumpkin caramel bundt cake, chocolate pumpkin sex in a pan, pumpkin spice cake with brown butter frosting or the tiramisu or anything you think might freeze.
Thanks!
Carolyn says
Sex in a pan and tiramisu won’t freeze well. But either of the cakes will. You may want to leave off the frosting or glaze until you get to where you are going.

You left off your pumpkin cream cheese muffin recipe. https://alldayidreamaboutfood.com/2013/10/pumpkin-cream-cheese-muffins-low-carb-and-gluten-free.html One of my favorites!

I would love the recipe for the Pumpkin Spice Cake with Browned Butter Frosting. I am never able to reach the Sweet Life website because I am always blocked it says due to virus or malicious attacks.
