Keto Pistachio Cream Cold Brew

Remember how I said I was going to give you fun recipes to use my keto pistachio cream? Well this is recipe number one. And if you have a Starbucks obsession, as so many of us do, you’re going to want to try this!

I rarely go to coffee shops anymore, as anything but regular coffee is usually full of carbs and sugar. But I love to make recreations of the popular drinks at home. A homemade Keto Frappuccino or Keto Pumpkin Cream Cold Brew can perk me up in an instant.

And this keto copycat recipe is easy to make, with a frothy, creamy topping and that unmistakable pistachio nuttiness. Without the sugar and without leaving the comfort of your own kitchen!

Ingredients and Substitutions

  • Pistachio cream: My homemade sugar-free pistachio cream adds flavor and sweetness. You can do plain pistachio butter but you will want to add some vanilla extract and additional sweetener.
  • Heavy cream: Cold foam topping requires the thickness of heavy cream to give it that luscious richness. You could try coconut cream for a dairy-free version.
  • Low carb milk: Any thinner milk will work here, including nut milk or cow’s milk. For an added boost of pistachio goodness, try the Pistachio Nut Pods Creamer.
  • Coffee: Cold brew is ideal but a strongly brewed cold coffee or espresso would work as well.
  • Sweetener: The coffee itself needs a touch of added sweetness. I used some vanilla stevia drops but any sweetener that dissolves well would work.

How to Make Pistachio Cream Cold Brew

  1. Combine the cream, milk, and pistachio cream in a jar or glass.
  2. Use a handheld frother to whip into a cold, thick foam.
  3. Fill a glass with ice and cold brew coffee and add sweetener as desired.
  4. Float the cold foam overtop of the coffee and enjoy!

Carolyn’s Tips for Success

The pistachio cream tends to thicken up quite a bit when refrigerated. To make sure it blends in well with the cream, let it come to room temperature first.

Use a jar or glass that is on the larger side for the cold foam. The hand frothers tend to be a little messy and a small container may send droplets flying everywhere.

If you don’t have a little hand frother, you can make the cold foam by putting a top on the jar and shaking vigorously until it thickens. You can also use a larger milk frother, if it has a cold setting.

Add just a little sweetener to the iced coffee portion, before floating the foam on top. You don’t want to make it overly sweet and you can add more to taste after you’ve mixed it in.

Keto Pistachio Cream Cold Brew

This Keto Pistachio Cream Cold Brew tastes just like the coffee house favorite, without the added sugar and carbs. Creamy, rich, and refreshing!

Ingredients
 

  • 2 tbsp (30.43 g) heavy whipping cream, chilled
  • 2 tbsp (30.43 g) almond milk, chilled, (or other low carb milk)
  • 1 tbsp keto pistachio cream, room temperature
  • 8 – 10 ounces (226.8 g) cold brew coffee, or strongly brewed cold coffee
  • Sweetener to taste

Instructions

  • Combine the cream, milk, and pistachio cream in a jar or glass.
  • Use a handheld frother to whip the mixture until thick and creamy, and the mixture has increased in volume.
  • Fill a 12 ounce glass with ice and add the coffee. Add any sweetener to your liking.
  • Pour the cold foam over top of the coffee and enjoy!
