Who can resist an ooey gooey cheesy dip straight out of the oven? This is low carb keto appetizer heaven!
I have a thing for appetizers. Surely you know this about me by now, right? I think food should come in bite-sized portions, I think the table should be filled with lots of different choices, and I think that chicken wings should be their own food group. And I think there should be one or more hot, cheesy, gooey dips surrounded by a plate of veggies so that I can scoop it up in all its melting glory without added carbs. No bread for me, thank you very much. Maybe some low carb crackers if I have the time and energy to make them but if not, endive leaves and celery will suit me just fine. Really, it’s all about getting that gooey cheese to my mouth without dripping any on my shirt.
Before the Super Bowl, I’d been seeing hot cheese dips all over Pinterest and I really wanted to serve one for game day. I spotted this beautiful Hot Caramelized Onion Dip with Bacon and Gruyere from Spicy Southern Kitchen and I HAD to make it. Except not quite the same way because onions are surprisingly high carb. But I knew I could get that same great caramel-y onion-y flavour with just one onion. I also used more sour cream and cheddar inlace of the Gruyere. Because I had a fridge full of cheddar from Cabot Creamery just begging to be used.
This was absolutely divine. My friend and I sat chatting and dipping, chatting and dipping, while everyone else was engrossed in the game. We had to stop ourselves because we were afraid we would eat it all!
