Delicious low carb mini chocolate muffins made with avocados. No flour needed. Nut-free and sugar-free.
You know, I used to think I was a pretty good avocado picker. I used to think I had a knack for picking perfectly ripe avocados with few to none brown spots. I’d stand at the store, eyeing the ones with the darker green skin, giving them a gentle surreptitious squeeze to see if they had that tender give under pressure. And I think I was pretty good, actually. More often than not, I’d come home with some pretty good ones, fruits that were that perfect green inside and had that creamy mellow flavour. But of course, on occasion I would disappoint myself and cut into what I thought was a good avocado, only to discover the browning flesh inside. Or worse, the perfect-looking avocado that had really fibrous, tough flesh even when perfectly ripe. Still, I would have given myself a pretty good grade in avocado picking. Maybe not an A+, maybe just an A.
Well, friends, I have been schooled! I have been shown the door. I have been made to face the truth of my avocado picking skills and have learned that they are sub-par at best. Because a few weeks ago, I received a shipment of avocados from California Avocados and every single one of them is perfect. Absolutely perfect. I marvel at the perfection every time I cut one open, all beautiful pale green-yellow flesh without a hint of browning or bruising. They are all perfectly ripe and tender, but they seem to be lasting in my fridge without getting too ripe. It’s been several weeks and we still have a number of them left. And they are still all perfect. Astonishing.
I don’t know who packed that box of California Avocados, but whomever it was….I bow down to your avocado-picking greatness. I am not worthy.
But these muffins are worthy! Easy, fast and delicious. A huge hit with the kids too. Please see my Flourless Chocolate Avocado Mini Muffin Recipe on A Sweet Life.
