Deliciously soft, low carb peanut butter cookies stuffed with creamy milk chocolate. Your tastebuds will thank you.
Remember a while back when I said that I felt no need to stuff one dessert inside another, as is the hot food blogger trend? Yeah, well, I lied. Or rather, I simply changed my mind. And I am not sorry in the least. It’s a woman’s prerogative, after all. Not the lying part, but the changing her mind part. We are creatures of whimsy, saying one day that we would never dream of succumbing to the silly fashions of the day, that we have far more sense and individuality than that. Then the very next day, there we are, donning the ostrich feathers or floppy hats or skinny jeans. Or stuffing one dessert inside another. If you dare to call us on it and remind us that we said we would never, we will just stare at you, sniff haughtily and turn away, incredulous that you would question our tastes and desires.
So I assert my right to change my mind and stuff my delicious low carb peanut butter cookies with chocolate. And this time, contrary to my usual inclinations, I chose milk chocolate. Gasp! But Carolyn, I thought you were a diehard dark chocolate fan! Well, yes. I am. And sometimes I prefer milk chocolate. All according to the whims of the day. So there. Just stuff it!
And by stuff it, I am referring to the cookies. You won’t regret it,even if your whims tell you to use dark chocolate.
