I love challenging the notion that healthy foods are, by their very nature, boring. Nothing gives me greater pleasure than creating an intensely delicious recipe that still fits into the low carb, gluten-free way of life. And I am far from alone. I know many bloggers who work hard at creating recipes that keep their readers on the healthy track without any sense of deprivation. Because let’s face it: deprivation sucks and there’s simply no way you will stick with a healthy lifestyle if you don’t love what you eat. Not all of these bloggers interpret “healthy” the same way you or I do. My “healthy” includes copious amounts of butter, cream, bacon and cheese while avoiding sugars and grains (and with lots of veggies and a little fruit too). That can be a little shocking for some folks, but I’ve done enough research and reading to truly believe this is a healthy way for me, and for most people, to eat. Still, everyone has to find their own way to healthy. My job isn’t to tell you what to eat; my job is to create the recipes that make you want to eat this way. Because if you commit to a healthy low carb lifestyle, you deserve to love it and to stick with it. And if you surround yourself with delicious food that still fits the diet, you will stick with it.
It’s January now and that means that bloggers like me are seeing a huge uptick in traffic. Everyone made their New Year’s Resolutions and are searching the internet like mad to find recipes that fit whatever diet they chose to follow. Now’s my chance to play my hand and win people over to a low carb, ketogenic diet with gorgeous photos of food and recipes that live up to the promise of those photos. I am working hard at it, you know.

The great part about this panna cotta, besides the amazing creamy texture and the light clementine flavor, is the fact that it’s totally customizable. If you aren’t into eating copious amounts of cream, as I am, you can make it with milk. Or if you are dairy-free, you can make it with coconut or almond milk. It’s all good, whatever floats your boat!
