Making healthy lunches is one of the more thankless jobs of parenthood. My third child just started kindergarten yesterday and as excited as I am for her, it means yet another lunchbox to fill in the busy mornings. I’d love to tell you that my darling children appreciate my husband’s and my efforts to pack them a healthful and flavourful lunch with plenty of good snacks to fill hungry tummies. But they don’t. Because they’re kids. And because they often see what other kids get or what the school lunch is and have “lunch envy”. It’s not an area in which I am willing to compromise and they know that. But it doesn’t make it any easier.
It doesn’t help that I lack serious creativity in the lunch department. Thank goodness other people are far more creative than I am and I can simply borrow their ideas. My kids will never question from whence the great idea came, right? Or maybe they’d be even more pleased knowing the idea come from someone other than their boring old mum. Maybe that will somehow make it more appealing!
These Turkey Pesto Pinwheels were “borrowed” from the Safeway O Organics back-to-school website. When I saw them, I thought how fun they’d be and that I could easily make them with my homemade almond flour crepes for gluten-free wraps. Kids being kids, I of course modified these to suit their tastes a little more, and made some with pesto and some with O Organics Dijon mustard. That way, I could please all three kids in one go. The crepes held up beautifully as wraps and I even made a few of these pinwheels for myself.
My local Safeway carries an extensive line of O Organics products, all certified organic at the highest level, that I can use to make any meal. I purchased their organic, cage-free eggs for my wraps this time, as well as the unsweetened almond milk. And I often grab the baby cut carrots and the sugar snap peas for healthy lunch box additions. The O Organics old fashioned peanut butter is a great choice and my kids love when I make “peanut butter roll ups” with my crepe recipe. My husband also makes a mean chicken salad so the kids would love a version of the chicken salad wraps made with my crepes. I see so many possibilities here to make their lunches a little more interesting and I have O Organics to thank for the inspiration.
No doubt my kids would go gaga for the DIY Strawberry Lemonade Fruit Leather too (I’d make mine with stevia or Swerve for lower sugars). I might win mum of the year for that. I’d better get cracking…

- 1 almond flour cream cheese crepe leave out sweetener
- 1 tbsp pesto OR Dijon mustard
- 2 slices deli turkey or any other lunch meat your child prefers
- 1 slice O Organics provolone cheese
- Spread crepe with pesto or mustard. Lay turkey over to cover about 3/4 of the crepe. Place provolone on top and roll up tightly. Cut into 4 or 5 slices.
