    Did you know that Easy Keto Dinners cookbook is over fifty percent dairy-free? Believe me, that is no accident, I did that by design. While I personally am not dairy-free, I know that many people who follow the keto diet are. Whether they choose to be so or they have issues tolerating dairy, I know it’s hard to find really good, really easy dairy-free recipes. And I need these recipes as much as you do! While I tolerate dairy just fine, I do know that sometimes it’s easy to over-do it. Especially on a low carb diet, where sometimes you just need a quick snack and you find yourself loading up on cheese, cheese, and more cheese!

    I really am enjoying putting together these meal plans and shopping lists based on my books.     One Pot Jerk Chicken and “Rice” – I adore jerk seasoning and this meal is so luscious and flavourful.

    Roasted Salmon with Lemon Dill Aioli – the official name is actually Butter Roasted Salmon but it’s also great with avocado oil or ghee.

        You aren’t asking me but I’ll offer it up anyway…I’ve been finding vegan cheeses made from cashews aren’t bad at all. It can be expensive and keep an eye on carbs and protein…but it’s been a reasonable alternative.

      I’ve been following your blog for a long time and have loved every recipe I’ve tried. I recently went dairy free to see if it would help with my post -coffee stomach ache and it’s made a huge difference! I immediately dropped 5 pounds and my PMS has disappeared! I was a bit worried about finding dairy-free recipes (and oh cheese, how I miss you!) but your books have been life savers! Thanks so much for all you do! I love to cook and I appreciate how every single recipe turns out wonderfully!

      I made the Bacon Sloppy Joes, Cheese Drop Biscuits, the Sunflower Butter Bread all yesterday. Delicious. So happy with the consistency of the Sunflower Bread…can’t wait to toast it.

      Love having the cookbooks…they already look well loved (used)!

      And a compliment from dh. The cinnamon roll coffee cake revived from years past, best thing ever.
