Every summer, I find myself drowning in the long green summer squash, and I am always looking for fun and delicious ways to use it.

If you grow your own, I am sure you feel much the same way. It’s delicious and useful, but zucchini plants are highly prolific. Sometimes you find yourself picking three or four squash a day.

Well, this collection of delicious keto zucchini recipes ought to help. It includes everything from breakfast to dessert, to help you make the most of your summer squash.

The ultimate keto vegetable!

Zucchini is perfect for keto recipes, as it’s one of the lowest carb vegetables out there. It contains a mere 3.1g of carbs per 100g, which is about half of a medium-sized zucchini.

That means that you can have a good sized helping and it will barely register in your blood sugar.

It’s also incredibly versatile, which makes the vegetable darling of the keto world. You can turn it into everything from pizza to bread to dessert. And you can cook it any number of way, from baking to sautéing to grilling. Unlike some vegetables, it’s great in both sweet and savory recipes.

How to freeze zucchini

If you do end up with an abundance of zucchini, you may want to consider freezing some of it. But because zucchini has such a high moisture content, it becomes mushy when left whole or sliced.

Try one of these methods for reducing moisture before freezing your zucchini.

Shredded zucchini: Shred the zucchini on a box grater or in a food processor. Place on a tea towel and squeeze out as much moisture as possible without salting it. Then place in freezer bags and press out as much air as you can. You can salt and drain the zucchini when it thaws.

Sliced zucchini: Slice the zucchini into 1/2 inch slices and blanch in a pot of boiling water until the skin turns bright green. Remove immediately and transfer to an ice bath. Then drain and lay the slices out on towels and blot dry.

Place the slices in a single layer on a cookie sheet lined with parchment paper and freeze until firm. Then transfer to freezer bags and press out as much air as possible.

Zucchini is one of the best vegetables you can choose for a keto or low carb diet. It’s very low in carbohydrate and makes an excellent addition to many recipes, from breakfast to dessert.

How many net carbs are in one cup of zucchini?

1 cup of sliced raw zucchini (113g) has 3.5 grams of carbs and 1.1 grams of fiber. So it contains 2.4 grams net carbs.

What can I do with too much zucchini?

There are many delicious ways to prepare zucchini. Try using it in one of the delicious keto zucchini recipes listed above. If you still have too much, you can freeze it for future use. And friends and neighbors might be willing to take some of it off your hands too.

    Hi Carolyn,

    Can you work on a recipe for zucchini chips? I had some in a restaurant a few weeks ago and would love to create them at home. Things I noticed…they used Parmesan cheese that comes in the green can which has cellulose in it and I think that helped with creating the crunchiness. There was butter somewhere in their recipe. The zucchini was sliced thin as potato chips.

    I’ve tried in my own and created a kitchen disaster! ????

    Hope you can help.

  3. I was looking for some zucchini recipes. I have brushed olive oil & spices on them to barbeque which is O.K. in a hurry, but all of these recipes look great! I have done Zucchini Boats which I LOVE, but hubby not so much and it’s just him & me, so I want something we will BOTH enjoy. Since I didn’t plan ahead, I don’t have all the ingredients needed for some of these recipes.
