Mini keto muffins filled with sweet sugar free jelly, these jelly donut bites are a fun family-friendly treat. Nut free and sugar free.
Okay, I had way too much fun coming up with these little keto jelly donut muffins. See how cute they are? Possibly the cutest snack I’ve ever made.
The idea of turning mini muffins into keto friendly donuts is not new. I’ve done it in the past with these apple cider donut bites. And I have a pumpkin donut bites recipe in The Ultimate Guide to Keto Baking as well.
But these keto jelly donut bites take the whole concept a step further, with a fun sugar free jam filling. I know you’re going to love them!
Coconut Flour Donuts
Coconut flour is one of my favorites for making any sort of sugar free or keto donut. Almond flour can work too but coconut flour makes them lighter and fluffier, in my opinion.
So even though technically, these are mini muffins, I chose to use coconut flour for that same donut-like consistency.
It’s actually a similar recipe to both my Keto Samoa Donuts and my Keto Mini Donuts. For all of these recipes, I used a bit of protein powder to make them even lighter.
Jelly Donut Muffin Inspiration
It was these delicious looking donut muffins from Rock Recipes that caught my eye. They were so pretty, I wanted to try giving them a keto makeover.
I did a bit of research on how to make jelly donuts and muffins. And I really wanted to follow the method of simply poking into the muffin with a piping bag.
Alas, keto muffins simply aren’t the same as wheat-based muffins. No matter how hard I tried, I couldn’t get much filling into the center of the muffin.
So I ended up going a more familiar route and cutting a little cone out of the top of each muffin. That way, you can fill them with more filling and replace the tops.
If you really want them to resemble jelly donuts, you can then push a little bit of filling into the sides with a piping bag.
How to make keto jelly donut muffins
The “jelly” filling
Make the filling first so it can cool properly before you fill the mini muffins. This is really more of a keto berry sauce but it does the trick! And if you prefer strawberries or blueberries, those work too.
The filling does require some glucomannan or xanthan gum to thicken it. You could also try using just a little gelatin (about 1 teaspoon) as well.
The coconut flour muffins
These little mini muffins are super easy to make. A few tips for getting them light and fluffy.
- Use a metal baking pan. I first tried this recipe in a silicone mini muffin pan and they flattened out a lot on the top. They also were more shallow and it was hard to fill them properly.
- If your coconut flour tends to clump up, sift it before mixing in any other ingredients. Nothing ruins a muffin like a clump of coconut flour.
- Whey protein is the best choice for the protein powder. Egg white protein tends to make them a little rubbery. If you really don’t want to use whey, then skip it altogether.
- The amount of liquid you add depends on your coconut flour. It varies so much brand to brand. You want the batter to be easily scooped and stirred, but not so liquidy that you can pour it into the pan.
- Let the mini muffins cool completely before attempting to fill them or roll them in sweetener.
Assembling the donut bites
This is a little messy but fun.
- Use a small sharp knife to cut into the tops at an angle, so that you get a cone shaped core.
- Cut off the part that would be the top of the muffin. Reserve this for closing up your donut bites after filling. Discard the rest.
- Spoon or pipe the jelly filling into the holes, filling them almost to the top.
- Replace the top of the muffin.
- Roll in powdered sweetener. You could also do granulated sweetener if you prefer. This is a bit messy and you will end up with sweetener all over your fingers. But it helps give you the real “jelly donut” experience!
That’s it, friends! Add these little jelly donut bites to your list of keto snacks. I know you will love them.

Keto Jelly Donut Bites
Ingredients
"Jelly" Filling
- ½ cup raspberries (or chopped strawberries)
- 1 tablespoon water
- ¼ cup powdered Swerve Sweetener
- ¼ teaspoon glucomannan
Mini Muffins
- ½ cup coconut flour
- ½ cup Swerve Sweetener
- ¼ cup unflavored whey protein powder
- 1 ½ teaspoon baking powder
- ¼ teaspoon salt
- 4 large eggs
- ¼ cup butter, melted
- ¼ cup water (more if needed)
- ¾ teaspoon vanilla extract
- Powdered sweetener for rolling
Instructions
Jelly Filling
- In a small saucepan over medium heat, combine the raspberries and water. Bring to a simmer, then reduce the heat to low and cook until the berries are soft enough to be mashed with a fork.
- Mash them up, then stir in the sweetener and the glucomannan. Let cool.
Mini Muffins
- Preheat the oven to 350F and grease a metal mini muffin pan well. If yours is not very non-stick, consider using silicone or parchment muffin liners.
- In a large bowl, combine the coconut flour, sweetener, protein powder, baking powder, and salt. Add the eggs, melted butter, water, and vanilla extract and stir to combine. If the batter is very thick, add another tablespoon or two of water. It should be easily stirred but not really pourable.
- Divide the mixture among the prepared muffin cups and bake about 15 minutes, or until the tops are firm to the touch. Remove and let cool completely in the pan.
To assemble
- Once the mini muffins are cool, use a small sharp knife to cut a small cone out of the top of each. Cut off the top of the cone (the part that would be the top of the muffin) and reserve.
- Fill the holes in the mini muffins with the raspberry filling and replace the tops. Roll the filled mini muffins in powdered sweetener.
- **If you REALLY want them to look like jelly donuts with jam oozing out a hole in the side, you can pipe a tiny bit of the raspberry filling into the side.

OMG these are freaking bomb. I used erythritol instead of swerve. Personally I happen to prefer the texture of that particular sweetener when baking keto.
I didn’t have any raspberries but I happened to have some strawberries on hand so I use those and will definitely be trying these with raspberries and probably blueberries eventually. I have a mini donut pan filled with the batter in a piping bag. After the donuts were cooled down I tossed them in powdered
swerve, flip them over and fill them up with the jelly. Let them set in the fridge for an hour or so and they are absolutely delicious. I also put half the batter in the mini cupcake baking pan as used in the recipe here and let them cool down, coned out the center and put in the jelly. Set the tops back on and tossed them in the powdered swerve as well. I cannot believe how delightful this recipe is thank you so much for sharing And making my keto life easier.

❤️ this recipe! I used my Nordic Ware ebelskiver pan instead of the mini muffin pan and baked about 25 minutes.

Very cool!

I made the raspberry filling first, planning to make the mini muffins, and the next day the filling had crystalized. I used exactly what the recipe calls for also. Should I reheat the filling and see if that helps? I didn’t finish the recipe for I sure don’t want them to be crunchy. Thanks!

Carolyn I love your recipes. One thing I’d love to see sometime is a blog post about what you eat in a typical day or a typical week. I don’t know how you can keep so many yummy treats around and still look as fit and trim as you do. Thanks for your hard work. Your recipes always work as they’re supposed to.

Soo darn cute!! How would you store the leftovers? I didn’t see anything in regards to that. Thanks!!!

Just in a covered container on the counter or in the fridge.

I just made your keto mini donuts earlier today and I was so impressed with them! (This coming from a girl whose weakness is the “bad” kind of donuts from Dunkin.) My entire not-on-the-bandwagon-with-no-sugar family even said they were good! Not that I’m actually sharing. Jelly filled and Boston Cream are my absolute fav donuts, so I am super excited to give these a try next! Thanks for your amazing recipes!

This is for those asking about the glucomannan. I purchased at Amazon. I really perfer the results of glucomannan to zanthan gum. I mix with cool liquid first when using.

Your recipes are always so wonderful! I have a sugar free jam recipe I like that I’m going to use in these, and I’m excited to make them–jelly donuts are one of the few sweet treats I really miss. But, honestly, “Discard the rest” after cutting a hole in the top? Are you kidding? I’ve already got plans to layer those little leftover bits with a some vanilla pudding or yogurt and some more of that raspberry jam for another tiny treat!
Carolyn says
Haha… I just ate them as I cut them. 😉 I consider that “discarding”.

LOL, me too! I’m gonna get back with you once I make these. You know I’m a serious fan of your recipes.

I dabbed a little bit of jelly on top of the crumbs I coned out and added a little bit of whip cream, tastes just like strawberry short cake! Never let good crumbs go to waste LOL.

Thanks for this recipe! These turned out delicious!
I added .5 TBSP xanthan gum to the muffins for a little more “pull” to make the texture a little more like donut holes.
I also took a bag of frozen, thawed strawberries and put them in my food processor on the “stir” (slowest) speed, transferred them to a small pot, added in the sweetener, and cooked on medium heat until just before it started to boil. I then added about .5 TBSP of xanthan gum to get the “jelly” consistency that I liked. I followed the other directions and they came out perfect! I only wish I could upload a picture! Thanks again!

These look delicious, but what the heck is glucomannan?
Carolyn says
Please read the blog post as I already answered that question and gave alternatives. Thanks!
Roye says
Is there are substitute for the glucomannan? I’ve never heard of it and certainly don’t have it on hand.
Thank you
