Here we are in August already, friends. How did that happen? I swear 5 minutes ago it was June and the kids were just getting out of school. The summer seemed to stretch out before us in a glorious fashion and I envisioned all the fun things we would do in the nice weather. But then I blinked and I looked around and the summer was almost gone. We have a bit to go yet, the kids don’t start back until the end of August and I have a trip up to Vancouver, BC to see family. But I still have that overwhelming sense that it’s vanishing before my very eyes.

And it’s the dog days now, as they say. We’ve actually had amazing weather all summer long, really mild and sunny. We haven’t had too many true “dog days”, where you feel indolent and lazy as all the heat sucks your energy. But I know that the rest of the country hasn’t necessarily fared so well. And I know only too well what it’s like to cook for a family on one of those days. You need to make dinner but it’s too hot to turn on the oven. And you don’t even want to think about standing outside near a hot grill. But that darn family is still expecting dinner, so what do you do?

You grab your slow cooker, of course. You make your life simple and you keep the kitchen cool at the same time, so it’s a win win. Just crisp up some bacon and brown some ground beef, dump them in the slow cooker with cheese and eggs and some spices. And then go sit back down with a cool drink and just try to survive. See, I know what you need!

Slow Cooker Bacon Cheeseburger Pie

 This Slow Cooker Bacon Cheeseburger Pie is an easy and delicious low carb meal the whole family will love. No need to heat up your kitchen!

Ingredients
 

  • 6 slices bacon, chopped
  • 1 lb O Organics grassfed ground beef
  • 2 cloves O Organics peeled garlic, minced
  • 1/4 tsp hot pepper flakes
  • Salt and pepper
  • 4 ounces O Organics cream cheese, softened
  • 6 large eggs
  • 1 1/2 cups O Organics Mexican shredded cheese or Cheddar cheese

Instructions

  • Grease the insert of a 6 quart slow cooker about 1/3 of the way up the sides.
  • In a large skillet, cook the chopped bacon until crisp. Remove to a paper towel lined plate, reserving the grease in the pan.
  • Add the ground beef and cook over medium until browned. Add the garlic, hot pepper flakes and season generously with salt and pepper and cook one minute more. Spread mixture in the bottom of the slow cooker and sprinkle with ¾ of the bacon bits and 1 cup of the shredded cheese.
  • In a large bowl, beat the cream cheese and eggs until smooth (you can also do this in a blender). Pour over the ground beef. Cook on low for 3 ½ to 4 hours, until the center is just set.
  • Sprinkle with the remaining shredded cheese. Replace the top and let the cheese melt, about 10 minutes. Sprinkle with the reserved bacon bits and cut into pieces to serve.

    Made this for dinner tonight and we really enjoyed it. It’s taken me until after dinner to realize that I could have done all the cooking in my slow cooker because the insert is metal and can be used on the stove top. I also discovered that the way to slice up the pie is to use the back of my ceramic knife, which does not scratch the non-stick surface of the slow cooker. Thank you for an excellent addition to my recipe repertoire.

    I baked this in my countertop oven at 350° for 20 min, turned out really good. I also added a 1/4 cup chopped white onion, because we just gotta have onion on our burger. ????????. I will be making this again.

    Kinda tasted like a quiche with hamburger meat. Was looking more for a cheeseburger in square form. Not really a fan 🙁

    Thanks for the recipe, I look forward to trying it out. What are you “greasing” your crock pot with? I assumed coconut oil or avocado oil, something keto friendly but I could be wrong and would like to follow your recipe very closely. Thanks!

  7. What about doubling the recipe? And baking it? (We are feeding 4 kids including 2 teenage boys) what size dish and how long should it bake?

    1. You can do a 9×13 pan but I don’t know how long you will need to bake it since I didn’t bake this at all. At least 30 min but possibly longer.

  8. So I don’t get these things at all.

    There’s 8 servings, at 376kcal per serving. That’s abysmally low.

    It’s recomended that a person get around 2000kcals per day. So if this is supposed to be a “Meal” that means the other meals per day need to be over 600 kcals each.

    Or else I need to eat twice as much.

    1. This would be your only part of dinner? Wouldn’t you add a side dish or a salad? You know… balance! 🙂 Additionally, you are referring to a man’s caloric requirement. Most women need 1500 to 1800.

      Eat twice as much if you like. That’s your prerogative.

  9. Im confused. Your recipe calls for .75 cup of shredded cheese, but your directions say mix 1 cup of cheese in the meat mixture. Then when cooked, top with the rest of the cheese. How much cheese did you actually use?

    1. Where are you seeing 3/4 cup? It says 1 1/2 cups (one and a half cups) in the ingredient list…

    Ok so my question is, does it end up being eggs with meat and cheese? I don’t like eggs and I am just worried it is gonna be like scrambled eggs. I can’t tell from the picture if it is eggs or if is like some fathead type “bread” … and if it is like scrambled eggs, half my house won’t even touch it so want to make sure before adding it to the list. Thanks!

    1. It’s mostly eggs and meat.

    2. You could add some coconut flour to the recipe. With 6 eggs, I’m guessing maybe 1/3 cup? Possibly a little less. That would give it more of a bread-like texture and not so eggy. I personally haven’t tried that with this recipe, but I’ve done that before with other recipes because I’m also not a big fan of eggs.

    Mine ended up tasting like plain mince topped with some eggy cheese and bacon 🙁 Unsure if I did something wrong or it just wasn’t to my liking, which is unusual as I enjoy your recipes for the most part. I did increase the hot pepper flakes and doubled the garlic cloves but thought it still needed a bit more oomph.

    1. Yes! My boyfriend and I both said at best it tasted like plain meatloaf. But with pickles, ketchup, and mayo, it was at least a bit more edible…

  13. I only have a 5qt slow cooker. Can I use that instead of the 6qt or do I need to adjust the recipe?

    1. I think it will be fine but it may take a bit longer to cook through.
