Smothered Pork Chops Recipe Inspiration
This lovely dream of a low carb, high fat recipe came to me when I was staring into my freezer, looking at the 30 pounds of pasture-raised pork I bought recently. Much of it came as pork chops and I do have a longstanding love affair with pork chops.
And if you’ve ever had pasture-raised pork chops, you’ll know what I mean when I say I fell even more in love. The meat is more tender and the fat is melt-in-your-mouth delicious. It tastes like butter, I swear. Like good, grassfed butter. I know grassfed and pasture-raised can be expensive but if you can get a little of it here and there, it’s worth it!
And caramelizing the onions in the bacon grease? Inspired, if I do say so myself. The onions become so tender and smooth, and the sauce becomes almost velvety.
Velvety onion goodness studded with bacon. On top of juicy seared pork chops. Do you believe me yet? Do I really need to sell you more on this meal? I loved it so much, I skipped dessert so I could have more. That, my friends, is an epic meal.
So what are you still doing here? Run. Run, I say. Run to your kitchen and make these crazy good keto smothered pork chops. Go on, scram! You can thank me later. And be sure to check out my Pork Chops with Roasted Poblano Sauce too!

Caramelized Onion & Bacon Smothered Pork Chops
Ingredients
- 6 slices bacon chopped
- 2 small onions thinly sliced
- ¼ teaspoon salt
- ¼ pepper
- 4 bone-in pork chops 1 inch thick
- Salt and pepper to taste
- ½ cup chicken broth
- ¼ cup heavy cream
Instructions
- In a large saute pan, cook bacon over medium heat until crisp. Use a slotted spoon to remove to a bowl, reserving bacon grease.
- Add onions to bacon grease and sprinkle with salt and pepper. Cook, stirring frequently, for 15 to 20 minutes, until onions are soft and golden brown. Add onions to bacon in the bowl.
- Increase heat to medium high and sprinkle pork chops with salt and pepper. Add chops to pan and brown on the first side 3 minutes. Then turn chops over and reduce heat to medium, cooking on the second side until internal temperature reaches 135F, about 7 to 10 more minutes. Remove to a platter and tent with foil.
- Add broth to pan and scrape up any browned bits. Add cream and simmer until mixture is thickened, 2 or 3 minutes. Return onions and bacon to pan and stir to combine.
- Top pork chops with onion and bacon mixture and serve.

This recipe is so easy to make and is a crowd pleaser at my house! Yes the sauce you could eat alone. Thanks for all your brilliant recipes; as I am new to your blog!! Big fan!
Donnie says
Could you make these in the crockpot, but brown them first? Sounds amazing. But I also have a cast iron skillet too!
Carolyn says
I suppose you could. DEFINITELY brown them first. I find pork chops in a slow cooker or instant pot get very rubbery otherwise. It’s not my favorite way to cook them.
Bev says
This recipe is so good. My husband says to keep the recipe.
Kris Oveson says

I live in the Portland area and would like the name of the grass fed pork producer. I couldn’t understand when you mentioned it in the video. Thank you

Tails and Trotters! They are amazing. The pork chops are huge and have so much fat on them, each one makes 2 to 3 meals for me. They are on 24th near Glisan.

O. M. G. ! ! ! These are THA BOMB!! Man! (and the topping was excellent stirred into my side dish too!!)
Carolyn says
Aren’t they good???
Bridget says
I made this recipe last night and was a little worried because I don’t have a large cast iron pan. It turned out perfectly in my regular pan. Will definitely make again.
Becky says
I have pasture raised pork chops in the fridge thawing………however they are boneless loin chops and are slightly thicker than the 1 inch.. Can I use this same recipe? Do I need to make any adjustments? Thanks!
Carolyn says
You can use them. They should take about the same time to cook because they are boneless, even though they are thicker. But I would be checking them with an instant read thermometer just in case. And have your oven set at 350F to pop them in there for 10 minutes if they aren’t cooking through.
Renee says
This was wonderful! My family really loved it as did I. My son who is about to go to college said I had to make it for him whenever he comes home! I made it as written and it was delicious. I will be adding more onions and bacon as the topping disappeared first. Thanks for the great recipe.
