Tired of boring old cauliflower? Liven up your routine with this list of creative cauliflower rice recipes. Low carb and grain-free, these 15 recipes turn the humble vegetable into delicious keto sides and dinner recipes everyone will love.

If you decide to follow a keto diet, you’d better make friends with cauliflower pretty darn quick. It’s going to be one of the things that saves your sanity. Because embarking on a low carb diet means giving up many filling comfort foods like pasta, rice, and potatoes and that can be really tough for some folks.
But good old cauliflower, that funny white bumpy thing that you rarely gave much thought to before, makes your low carb transition a whole lot easier. It can be a really great replacement for all of the above, and it’s a whole lot kinder to your waist line and your blood sugar.
The benefits of cauliflower rice:
- Low in carbs and high in fiber
- Full of antioxidants
- Loaded with nutrients such vitamins C, K, B6, and potassium
- Quick and easy to make
- Freezes well
- Available in many stores in the freezer and produce sections
Rice has become such a staple in the American diet, it can feel like it’s in everything. So many of the most popular cuisines are heavy on the rice: Mexican, Asian, Indian. Even Italian food has plenty of rice. It’s a hard one for people to give up.
While cauliflower rice isn’t exactly the same, it really does help low carb dieters enjoy many of their favourite foods again. And a big bonus is that you don’t have that uncomfortably full feeling you get with real rice. Cauliflower rice is almost infinitely adaptable and I find new ways to use it almost every day. So try a few of these delicious and creative keto cauliflower rice recipes on for size!

The Best Keto Cauliflower Rice Recipes
1. Mexican Cauliflower Rice
This flavorful one-pan meal is among my most popular dinner recipes, along with Keto Taco Pie. And it takes only 25 minutes to make!

2. Keto Mushroom Risotto
A low carb twist on an Italian classic that elevates your favorite meals. Pair it with keto pork tenderloin or pecan crusted salmon for a healthy gourmet dinner!

3. Keto Cabbage Roll Soup
It has all the flavor of the classic dish with a fraction of the carbs. And it’s far easier to make too! Add this recipe to your list of keto ground beef recipes for a simple and delicious winter meal.

4. Shrimp Fried Cauliflower Rice
This has quickly become one my favorite low carb high protein recipes. It takes so little effort and yet results in a satisfying, flavorful meal.

5. Keto Breakfast Casserole
his lightened up CrockPot Breakfast Casserole takes healthy breakfasting to a whole new level. It’s a cinch to assemble, full of flavor, and packed with protein.

6. Cilantro Lime Cauliflower Rice
This easy side dish goes with just about anything, but is particularly good with Mexican inspired dishes. We love to pair it with mains like Mexican Shredded Beef, Keto Carnitas, and Easy Keto Chicken Fajitas.

7. Keto Stuffed Pepper Skillet
I adore keto stuffed peppers, but I don’t always have the patience to make them from scratch. So I figured why take all of those same ingredients and cook them together in a skillet.

8. Keto Spanakorizo
It was a reader who reached out suggesting that I make a keto version of this popular Greek side dish. And one quick look into a classic recipe, and I was all in. It is simple to make, takes fresh keto ingredients, and is ready in 25 minutes. What’s not to love?

9. Keto Jambalaya
Classic jambalaya is heavy on the rice, but a simple switch to cauliflower rice turns it into a lighter, healthier option. And this recipe cooks everything together on one sheet pan, for simple preparation and easy clean up. It’s one of my favorite keto sheet pan recipes.

10. Keto Italian Wedding Soup
A rich warm broth full of succulent keto meatballs and sprinkled with plenty of Parmesan cheese. But skip the pasta and pop in some cauliflower rice instead. Now you’ve just amped up the nutrition and managed to warm yourself up at the same time.

11. Coconut Cauliflower Rice
This side dish is simple to prepare and ready in less than 15 minutes. And that unique, slightly sweet tropical flavor makes it the perfect side dish for any Thai, Indian, or South Asian recipes.

12. Keto Avgolemono
Classic Avgolemono takes orzo or rice along with the chicken, egg, and lemon. You simply replace the orzo with cauliflower rice or another low carb rice option to make it keto appropriate.

13. Cauliflower Rice Pilaf
With garlic, sage, and some of my sugar free dried cranberries, this cauliflower rice pilaf is extra flavorful. And a few toasted pecans add great crunch and texture.

4. Keto Sushi Bowls
Isn’t it nice when a healthy meal comes together so easily, you hardly need to think about it? That’s exactly what I love about these Keto Sushi Bowls. I make them all summer long and I can’t get enough.

15. Keto Jerk Chicken and Rice
One of my favorite recipes from my Easy Keto Dinners cookbook!

Yay! Thank you so much for sharing these recipes. I’ve made a couple of them, but there are many I hadn’t seen before. These are great. Thank you!
I can’t wait to make these recipes. I love cauliflower rice and use it all the time.
Looking at these, I don’t know which to do first, but I am sure I will get input from my husband who is on a medically managed Keto plan (I won’t name it incase it goes against your policies) for his type 2 diabetes. I am along for support, though not as strict. Your website is a treasure trove that many in the program mention. Anyway, I was wondering if you had a yellow cauliflower rice recipe?
Dawn
I don’t… do you mean like saffron or turmeric rice?
Hello,
Which low carb, keto, instapot recipe book would you recommend?
I’ve just gotten mine, it is not a Instant Pot, mine is by Master Chef.
I’ve seen so many low carb instant recipe books but would appreciate your suggestions.
Thank you.
Hi Carolyn, thank you for this extensive list may I ask if you have a recipe for Chicken Fried Rice made with Cauliflower rice? I love all of your recipes and now own 4 of your cookbooks.
Such great recipes. I’ll be making lots of them. Who knew cauliflower could be so versatile! Thank you so much for your recipes and putting together such a great list for us. To make things easier for myself I chop a whole cauliflower in my food processor, use what I need and freeze the rest in quantities I would use. Then it’s available when I want it.
LOVE YOUR SITE! and THANK YOU FOR ALL THE WORK YOU DO GIVING US WONDERFUL RECIPES FOR THIS KETO LIFESTYLE.
All these cauliflower recipes sound wonderful. However, we have been craving meatloaf. Instead of the breadcrumbs in the mix, thought to use cauliflower rice. What “kind” would you recommend for making a meatloaf??
Thank you a thousand times! All of these recipes sound fabulous and I can’t wait to try them all!??❤️
Late to the game here, but I’ve ordered your cookbook and can’t wait for it to arrive! Is the 29 CREATIVE LOW CARB RECIPES FOR CAULIFLOWER RICE available in book form? ps: Just finished my dinner of leftover Mexican Cauliflower Rice Skillet Dinner and it’s so fabulous! Thanks for what you do. 🙂
Took me awhile to leave a comment but I wanted to try so many of these recipes that I have been busy, busy. Cauliflower has been cheap recently at my local Asian food market so I have been buying a lot. I use a Presto salad shooter to make it into “rice” and have tried Indian spiced and Chinese fried and even made up my own recipe for “dirty” cauliflower rice and they are all good and make me want to try more.
My hubby has taken leftovers to work for lunch and now 3 of his coworkers are trying “low-carb”!
Nicely done!
Thank you a thousand times! All of these recipes sound fabulous and I can’t wait to try them all!??❤️
I am attempting a cauliflower pizza crust this evening, wish me luck, lol
Thank you for including my Buffalo Chicken and Broccoli Bowls! So many great dishes here, sharing this!
Much appreciated! Your recipe looks delicious!
Thank you so much for including my recipe! These all look so good!
I love it. If you haven’t tried the frozen cauliflower rice from Trader Joe’s, it’s pretty amazing for those nights when using the food processor seems like too much work! Thanks for including me!
I keep meaning to try out this cauliflower rice! This post makes me want to do it even more!
