
When summer is in full swing and I need to chill out a little, I grab some limes and get squeezing. Admittedly, some of them find their way into keto margaritas, because I need a cocktail once in a while. But more often than not, I whip up this Keto Coconut Limeade. It’s a summertime favorite in my house.

Summers in the PNW are astonishingly hot and dry, so cold drinks are a must. And I love getting creative with flavors and low carb ingredients. Keto Caramel Frappuccinos and Sugar Free Ginger Lemonade are standard fare on a sweltering day.
I was in Colombia recently and my traveling companions indulged in Limonada De Coco frequently. I did not join in the fun, since this popular drink has copious amounts of sugar. But when I got home, I decided to revisit this and update it for the summer. One sip and I remembered why I loved it in the first place.
Light, bright, and bubbly, and totally sugar-free!
Ingredients and Substitutions

- Coconut milk: I think this recipe works best with light coconut milk, but full fat coconut milk also works.
- Lime: Nothing can replace fresh lime, since you need both the zest and the juice. Bottled juice just won’t taste the same.
- Sweetener: You can use any sweetener you like best here, as long as it dissolved well in liquids.
- Club soda: This adds volume and a delightfully fizziness!

If you don’t have crushed ice, you can simply make it yourself by pulsing ice cubes in the blender. Do this before adding any liquid, as everything will blend up better with smaller chunks of ice.
Want even more lime flavor without adding carbs? Try adding a little lime extract or a packet of True Lime along with the other ingredients.
You can easily turn this into a cocktail. Simply add 2 ounces of rum or vodka to the blender along with the other ingredients.

Keto Coconut Limeade Recipe
Ingredients
- 1 cup crushed ice
- 1/2 cup light coconut milk, see notes
- 2 tsp lime zest, (about 1 lime)
- 1/4 cup freshly squeezed lime juice, (about 2 limes)
- 2 tbsp powdered sweetener
- 1 cup club soda, (or lime flavored seltzer)
- Lime wedges for garnish
Instructions
- In a blender, combine the ice, coconut milk, lime zest, lime juice, and sweetener. Blend until smooth and well mixed.
- Divide into 2 glasses and add the club soda. Stir to combine.
- Garnish with lime wedges.

How could I use alcohol in this? I don’t know what the carbs are in rum, or even if rum would taste good in this.
I’m attending something on 11/22/25 that I would like to have a cocktail. This isn’t the type of drink that I go for but it sounds better than some others I’ve read.
I’m not allowed to have carbonated drinks. Can I skip the club soda and if so should I add something else?

Kinda like it but it’s just so odd! The lime almost makes the coconut taste spoiled but it’s a bit different cause it tested like like not sure how I feel about this but it’s not bad ????
