Once upon a time, I was a serious PSL girl. So much so that I requested (ahem… demanded!) that my husband bring me one in the hospital after I had my third child. Those days are long behind me now, and I actually shudder at the thought of sipping such a sugary drink.

But I do love all things pumpkin spice and I still enjoy it as a coffee treat. But only on my own terms, made with this sugar-free keto pumpkin spice syrup. It’s heaven in a bottle! And it takes only 4 ingredients and less than 10 minutes to make.

It’s great in coffee drinks, of course. But I also love it drizzled over keto waffles or keto overnight oats. A wonderful start to a crisp fall day!

Homemade vs. Store-bought

There are sugar-free pumpkin spice syrups on the market, but to be honest, I don’t find any of them worth it. They are either far too sweet, have a strong aftertaste, or have quite a few artificial ingredients.

By making your own at home, you can control the amount of sweetness and the flavor to your liking. And since it’s made with real ingredients and nothing artificial, you know exactly what you’re getting!

Let’s Talk Ingredients

  • Sweetener: I recommend using allulose to get that syrupy quality, but xylitol will also work.
  • Pumpkin puree: Some real pumpkin puree gives a classic flavor to the syrup.
  • Pumpkin spice: You can use store-bought or make your own. And you can add more to your liking!
  • Vanilla extract: You could also use pumpkin spice extract for more flavor. Or use a little of both!

How to Make Keto Pumpkin Spice Syrup

  1. Combine the ingredients: Whisk the water, sweetener, pumpkin puree, and pumpkin spice in a medium saucepan.
  2. Simmer: Bring to a boil over medium heat, then reduce to a simmer for 7 minutes.
  3. Add the vanilla: Remove from heat and whisk in the vanilla extract.
  4. Let cool: Cool to room temperature, then transfer to a glass jar or bottle.

Carolyn’s Tasty Tips

Allulose is by far the best sweetener for this recipe, as it becomes syrupy when simmered. Xylitol or BochaSweet may also work. I don’t recommend erythritol based sweeteners as they will recrystallize as the syrup cools.

You can adjust the sweetness and the flavor to your liking. Taste the mixture after simmering and whisk in more sweetener or pumpkin pie spice if you like. You can bring it back over low heat to make sure the sweetener dissolves.

The pumpkin and spices tend to settle out as the syrup sits. Just give the jar a shake before adding to your coffee to mix it all up again.
