Strawberry Thyme Cocktail (Guest Post)

Two guest posts back to back!  I actually didn’t plan for things this way, it just sort of happened.  Last week’s lovely guest post got pushed to Friday for various reasons and then this lovely guest post was scheduled for today.  It makes me feel like I look a bit lazy about my own blog! But it hardly matters.  You come here to read great recipes and that’s what you are getting.  Karen from Tasty Trials is and always has been one of my favourite bloggers.  Her food is fantastic, her pictures are drool-inducing and she writes so well.  She’s the whole darn package!  And she has recently become a professional blogger and recipe developer…one look at her blog and you can see why.  She’s also been on something of a cocktail kick, bless her heart.  You know how much I appreciate a well-crafted cocktail.  This Strawberry Thyme Cocktail looks spectacular and a little switch of some erythritol for sugar, and it’s low carb!

Hello there, All Day I Dream About Food readers…I’m Karen from Tasty Trials and I’m so happy to be guest posting here today! Carolyn was one of the first blogs I stumbled upon when I started blogging and she definitely gave me something to strive for. Besides that, she was welcoming, warm and friendly. And I am constantly in awe of her ability to make sugar-free, low-carb, gluten-free recipes look so darn good!

Now I know that Carolyn said she was giving all us guest-posters free reign when it came to our recipes, but I have to admit that I made several dishes that I didn’t deem healthy enough for her blog. Admittedly, I am clueless about the things Carolyn deals with on a daily basis, but I do know that most of my recipes probably fall into her “can’t eat” category. Instead, I scrapped all my other ideas and decided to make a cocktail, which I’m sure doesn’t come as any surprise to Carolyn! And even though there’s sugar in this, I’m sure she could easily work her magic to turn this into a drink she could enjoy too.

So I’d like to offer you up this summery cocktail and a virtual cheers to Carolyn. Thanks for having me!

This is a refreshing drink with a touch of sweetness and a hint of thyme.

Strawberry-Thyme Cocktail
Makes 1 cocktail
3 ounces strawberry-thyme syrup (recipe follows)
1 1/2 ounces lemon vodka
squeeze of lemon
Put all ingredients in a cocktail shaker with ice. Shake until cold. Strain into a martini glass or over ice.
Strawberry-Thyme Syrup
Makes enough for 2 cocktails
1/2 cup chopped strawberries
3 sprigs fresh thyme
1/4 cup sugar**
1/2 cup water
Put all ingredients in a small saucepan over high heat. Stir to combine. Bring to a boil, then reduce to a simmer for about 5 minutes, until the strawberries are softened. Remove thyme sprigs, then puree mixture in a blender and strain.
**You could easily substitute another sweetener here for a low-carb version.
