It’s high summer and it’s hot out there. And while you still want a treat, you certainly don’t want to be baking. That oven gives off way too much heat! That’s why you need this list of Easy Keto Dessert Recipes.

If there’s one thing I’ve learned in my 10+ years doing low carb is that preparation is key. Having a few keto treats around keeps me from succumbing to any sugary temptations.

But when life gets busy, I don’t always have time to bake something spectacular. Or it’s simply too hot out to turn on the oven. So I rely on these recipes to see me through.

Creamy, decadent, and delicious, and no baking required. And many of them whip up in a few short minutes. How can you beat that?

5. Sugar Free Marshmallows

Seriously, people, please tell me why it took me so long to try making my own keto marshmallows??? I am kicking myself. HARD! Ingredients for Keto Chocolate Truffles

Instructions

  • In a medium saucepan over medium heat, bring the heavy cream and espresso powder to a simmer. Remove from heat and add the chopped chocolate. Let sit 5 minutes to melt.
  • Add the sweetener and butter, and whisk until smooth. Refrigerate until firm, about 1 hour.
  • Using about 1 tablespoon of the mixture at a time, roll into balls and place on a waxed paper lined cookie sheet. Freeze 1 hour.
  • In a heatproof bowl set over a pan of barely simmering water, combine the dark chocolate chips and cocoa butter. Stir frequently until melted and smooth.
  • Dip the frozen truffles in one at a time, tossing with two forks to coat. Lift out and tap the fork on the side of the bowl to remove excess chocolate. Place back on the waxed paper lined baking sheet.
  • Place the white chocolate in another heat proof bowl and set over the pan to melt, stirring constantly.
  • Drizzle any remaining melted dark chocolate over half of the truffles and drizzle white chocolate over the rest (Place the melted chocolate in a ziploc baggie with the very corner snipped off to pipe it over).
  • While the chocolate drizzle is still warm, place one espresso bean on the top of each truffle. Let set.

    hi Carolyn, I am making your keto condensed milk recipe and I was wondering if you have a recipe for coconut macaroons using the condensed milk because the recipes I’ve used in the past have been with the condensed milk.
    ALSO!!! would you happen to have an ice cream recipe for sweet cream ice cream? I like it better than vanilla😊
